All Hail to Kale!

No Dolvett I won't let you down!
It's gotten really chilly again in the (626) so I went to the gym last night to use a treadmill.  I had to wait a couple minutes for an available one, and then spent the next half an hour stressing about all of the other people waiting and hoping no one would come over and tell me that I was over my time limit... But I'm still a little drained from that flu last week so 30 minutes was plenty.

I mentioned last week that I switched to the half marathon for the Mermaid race on February 9th.  They were really sweet and helpful about the switch and charged me less than the current rate for the half. I originally paid $50 for 6 miles, and then only had to pay $10 more for another 7 miles - that's a deal I just couldn't pass up (I'm all about a good bargain).

But because of the flu I'm less hopeful about pulling a decent time.  I still have 2 weeks so hopefully I can gain my strength back 100% and then some...

But either way it's going to be a fun weekend.  Two of my friends are doing the 10k and my mom is doing the 5k so it's going to be an all out girly ladies weekend.

I haven't decided what to wear yet. I kind of want to incorporate the mermaid concept, but don't want to do the typical Ariel thing... any suggestions?

After the gym I went to the grocery store and broke a cardinal rule of eating healthy.  NEVER GO TO THE GROCERY STORE HUNGRY.

I also might have been a little bit PMSy... so tater tots and mint chip ice cream somehow made their way into the cart.

But on a positive note, my hunger gave me the courage to actually buy kale! Haha maybe that's not a big deal to some of ya'll, but I've personally been really intimidated by it... but not anymore!

So when I got home I sauteed (yeah that's right - I sautee) it with some chicken and it turned out delicious edible. I'll keep working on it...
The shinning star of dinner was mashed up cauliflower with cream cheese and garlic. Now that was actually delicious.  Donny even ate it willingly which says a lot.

And then after all those veggies, you better believe I dug into that mint chip ice cream :)

  1. I just recently got into liking kale as well. I love sauteing it with mushrooms, garlic,and onions. I have yet to try out kale cold, but I have seen a few breakfast shakes that incorporate kale in the recipe. I don't know if I'm that brave yet though.

  3. There's a place called Market Cafe in Downtown LA and they sell kale chips instead of potato chips. Maybe I'll try them out and let you know how they are.
